Since we hadn’t posted any thing cooking related we thought we’d post one of our favorite tex-mex dishes. Chicken Fajitas. We are always in a hurry but still like to enjoy a home cooked meal a few times a week. So we have really become fans of anything quick and easy. This recipe takes only about half an hour to prepare and is delicious. Below is what you will need. Enjoy.
Ingredients:
Chicken tenderloin Strips (1lbs)
Fresh Onion (1)
Bell Pepper (1)
Olive Oil (2-3 table spoons)
Spanish Rice Mix
Can of pinto beans
Packet of bacon bits
Parsley flakes
Can of diced tomatoes
Pepper
Garlic Powder
Packet of Fajita Seasoning mix
Pack of Flour or corn Tortillas
1/4 cup of water
Shredded cheese
Simple Directions:
Rinse Chicken and cut into 1 – 1.5 inch strips
Cut onion and bell pepper into thin strips
Start cooking the spanish rice per directions on box
Start heating the beans in a small pot (medium – low heat)
Add can of tomatoes to beans
Add a small amount of onion and garlic powder to beans
Add pepper and parsley to beans
Cook chicken in a large skillet – Add 1 table spoon of olive oil
Cook chicken on skillet for 4-5 minutes or no longer pink (medium high heat)
Remove chicken from skillet and place in bowl
Add one more table spoon of oil to skillet
Cook onion and bell pepper for 4-5 minutes until onion caramelizes
Add chicken back to skillet with the 1/4 cup of water
Add seasoning packet and mix together
Cook for 4-5 more minutes
Heat tortillas on skillet if desired
Serve as desired
